Curry Vegetable Stir Fry

This flavorful curry vegetable stir fry is packed with colorful vegetables and aromatic spices.

Ingredients

  • Fresh cilantro - For garnish
  • Salt - To taste
  • Lime juice - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Coconut milk - 1 cup
  • Green beans - 1 cup, trimmed and halved
  • Bell peppers - 2, sliced
  • Carrots - 2, sliced
  • Cauliflower - 1/2 head, cut into florets
  • Turmeric - 1/2 teaspoon
  • Curry powder - 2 teaspoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Onion - 1, thinly sliced
  • Vegetable oil - 2 tablespoons

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium heat.
  2. Add the onion, garlic, and ginger. Cook until the onion is translucent and fragrant, about 2-3 minutes.
  3. Add the curry powder and turmeric. Stir well to coat the onions and spices.
  4. Add the cauliflower, carrots, bell peppers, and green beans. Stir fry for 5-6 minutes, until the vegetables are crisp-tender.
  5. Pour in the coconut milk and soy sauce. Stir well to combine.
  6. Cover and simmer for 5 minutes, or until the vegetables are cooked to your liking.
  7. Stir in the lime juice and season with salt to taste.
  8. Garnish with fresh cilantro before serving.
  9. Serve hot with steamed rice or naan bread.
