Broccoli Cheddar Soup

A creamy and comforting soup made with fresh broccoli and cheddar cheese.

Ingredients

  • Salt and pepper - To taste
  • Cheddar cheese - 2 cups, shredded
  • All - purpose flour - 1/4 cup
  • Milk - 2 cups
  • Chicken or vegetable broth - 4 cups
  • Broccoli - 4 cups, chopped
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, chopped
  • Butter - 4 tablespoons

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
  3. Add the chopped broccoli and cook for another 5 minutes.
  4. In a separate bowl, whisk together the flour and milk until smooth.
  5. Pour the milk mixture into the pot with the broccoli and stir well.
  6. Add the chicken or vegetable broth and bring to a simmer.
  7. Simmer for 15-20 minutes, or until the broccoli is tender.
  8. Using an immersion blender or regular blender, puree the soup until smooth.
  9. Return the soup to the pot and stir in the shredded cheddar cheese until melted and creamy.
  10. Season with salt and pepper to taste.
  11. Serve hot and enjoy!
