Ingredients

  • Crusty bread - For serving
  • Salt and pepper - To taste

  • Fresh parsley - 1/4 cup, chopped
  • White wine - 1 cup
  • Tomatoes - 4 large, diced
  • Garlic - 4 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh mussels - 2 pounds

Instructions

  1. Clean the mussels by scrubbing them under cold water and removing any beards or debris.
  2. Heat the olive oil in a large pot over medium heat.
  3. Add the minced garlic and cook until fragrant, about 1 minute.
  4. Add the diced tomatoes, white wine, chopped parsley, red pepper flakes, salt, and pepper. Stir to combine.
  5. Bring the sauce to a simmer and cook for 5 minutes to allow the flavors to meld together.
  6. Add the cleaned mussels to the pot and cover with a lid. Cook for about 5-7 minutes, or until the mussels have opened.
  7. Discard any mussels that did not open.
  8. Serve the Cozze alla Marinara in bowls, with the sauce and mussels. Serve with crusty bread for dipping.
