Couscous

This refreshing couscous salad is packed with colorful vegetables and tossed in a tangy lemon vinaigrette.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh mint - 1/4 cup, chopped
  • Fresh parsley - 1/4 cup, chopped
  • Red onion - 1/2, finely chopped
  • Red bell pepper - 1, diced
  • Tomatoes - 2, diced
  • Cucumber - 1, diced
  • Vegetable broth - 1 cup
  • Couscous - 1 cup

Instructions

  1. In a medium saucepan, bring the vegetable broth to a boil.
  2. Add the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  3. In a large bowl, combine the cooked couscous, cucumber, tomatoes, red bell pepper, red onion, parsley, and mint.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the vinaigrette.
  5. Pour the vinaigrette over the couscous salad and toss to combine.
  6. Refrigerate for at least 1 hour before serving to allow the flavors to meld together.
  7. Serve chilled and enjoy!
