This refreshing chopped salad is packed with fresh vegetables and tossed in a tangy vinaigrette dressing.

Ingredients

  • Salt and pepper - To taste
  • Honey - 1 teaspoon
  • Dijon mustard - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 1/4 cup, chopped
  • Feta cheese - 1/2 cup, crumbled
  • Kalamata olives - 1/4 cup, pitted and halved
  • Bell pepper - 1, diced
  • Red onion - 1/4 cup, thinly sliced
  • Tomatoes - 2, diced
  • Cucumber - 1, diced
  • Romaine lettuce - 1 head, chopped

Instructions

  1. In a large bowl, combine the chopped romaine lettuce, cucumber, tomatoes, red onion, bell pepper, kalamata olives, feta cheese, and fresh parsley.
  2. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey, salt, and pepper to make the vinaigrette dressing.
  3. Pour the dressing over the salad and toss to coat evenly.
