Chicken Chowder

This hearty chicken chowder is packed with tender chicken, vegetables, and creamy broth.

Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Salt and pepper - To taste
  • Garlic powder - 1 teaspoon
  • Butter - 2 tablespoons
  • All - purpose flour - 1/4 cup
  • Milk - 2 cups
  • Chicken broth - 4 cups
  • Corn - 1 cup, frozen
  • Potatoes - 2, peeled and diced
  • Celery - 2 stalks, diced
  • Carrots - 2, diced
  • Onion - 1, diced
  • Chicken breast - 2, boneless and skinless, diced

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Remove the chicken from the pot and set aside.
  4. In the same pot, add the diced onion, carrots, celery, and potatoes. Cook until the vegetables are tender.
  5. Add the chicken broth and bring to a boil.
  6. In a separate bowl, whisk together the milk and flour until smooth.
  7. Slowly pour the milk mixture into the pot, stirring constantly.
  8. Add the cooked chicken, corn, garlic powder, salt, and pepper. Simmer for 15 minutes.
  9. Garnish with fresh parsley before serving.
