Camarones Enchilados

Camarones Enchilados is a delicious and spicy shrimp dish with a flavorful tomato-based sauce.

Ingredients

  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Cayenne pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Chicken broth - 1/2 cup
  • Tomato sauce - 1 cup
  • Bell pepper - 1, diced
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, finely chopped
  • Shrimp - 1 pound, peeled and deveined

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the onion, garlic, and bell pepper. Cook until softened, about 5 minutes.
  3. Add the shrimp and cook until pink and cooked through, about 3-4 minutes per side.
  4. Remove the shrimp from the skillet and set aside.
  5. In the same skillet, add the tomato sauce, chicken broth, cilantro, cumin, paprika, cayenne pepper, salt, and pepper. Stir well to combine.
  6. Simmer the sauce for 10 minutes, allowing the flavors to meld together.
  7. Return the cooked shrimp to the skillet and toss to coat them in the sauce.
  8. Cook for an additional 2-3 minutes to heat the shrimp through.
  9. Serve the Camarones Enchilados hot with rice or tortillas.
  10. Garnish with additional chopped cilantro, if desired.
