Caldo de Pollo

Caldo de Pollo is a traditional Mexican chicken soup packed with flavor and hearty ingredients.

Ingredients

  • Chicken broth - 8 cups
  • Bay leaf - 1
  • Cumin - 1 teaspoon
  • Pepper - To taste
  • Salt - To taste
  • Lime - 1, juiced
  • Cilantro - 1/4 cup, chopped
  • Garlic - 3 cloves, minced
  • Onion - 1 large, chopped
  • Celery - 2 stalks, sliced
  • Potatoes - 2 medium, diced
  • Carrots - 2 large, sliced
  • Chicken - 1 whole, cut into pieces

Instructions

  1. In a large pot, bring the chicken broth to a boil.
  2. Add the chicken pieces, carrots, potatoes, celery, onion, garlic, cilantro, lime juice, salt, pepper, cumin, and bay leaf.
  3. Reduce the heat to low and simmer for 45 minutes, or until the chicken is cooked through and the vegetables are tender.
  4. Remove the chicken pieces from the pot and shred the meat using two forks.
  5. Return the shredded chicken to the pot and simmer for an additional 10 minutes.
  6. Taste and adjust the seasoning if needed.
  7. Serve hot and garnish with additional cilantro, if desired.
