Cabbage and Sweet Potato Hash

This hearty and flavorful cabbage and sweet potato hash is a delicious and nutritious side dish.

Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Salt and pepper - To taste
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, diced
  • Cabbage - 1/2 small head, thinly sliced
  • Sweet potatoes - 2 medium, peeled and diced

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced sweet potatoes and cook for 5 minutes, stirring occasionally.
  3. Add the diced onion and minced garlic to the skillet and cook for another 5 minutes, until the onions are translucent.
  4. Add the sliced cabbage to the skillet and cook for 8-10 minutes, until the cabbage is tender.
  5. Sprinkle paprika, salt, and pepper over the hash and stir to combine.
  6. Cook for an additional 2 minutes to allow the flavors to meld together.
  7. Remove from heat and garnish with fresh parsley before serving.
