Bun Ga Xao

Bun Ga Xao is a flavorful Vietnamese dish made with marinated lemongrass chicken served over vermicelli noodles and fresh vegetables.

Ingredients

  • Lime wedges - For serving
  • Roasted peanuts - 1/4 cup, crushed
  • Mint leaves - 1/4 cup, chopped
  • Carrots - 1, julienned
  • Cucumber - 1, thinly sliced
  • Lettuce - 2 cups, shredded
  • Vermicelli noodles - 6 ounces, cooked according to package instructions
  • Vegetable oil - 2 tablespoons
  • Sugar - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Fish sauce - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Lemongrass - 2 stalks, minced
  • Chicken breast - 2, boneless and skinless

Instructions

  1. In a bowl, combine the minced lemongrass, minced garlic, fish sauce, soy sauce, and sugar to make the marinade.
  2. Slice the chicken breast into thin strips and add them to the marinade. Let it marinate for at least 20 minutes.
  3. Heat the vegetable oil in a large skillet over medium-high heat.
  4. Add the marinated chicken and cook until it is cooked through and slightly caramelized, about 5-7 minutes.
  5. Prepare the vermicelli noodles according to the package instructions.
  6. To serve, divide the cooked vermicelli noodles among two bowls.
  7. Top with the cooked lemongrass chicken, shredded lettuce, sliced cucumber, julienned carrots, chopped mint leaves, and crushed roasted peanuts.
  8. Serve with lime wedges on the side.
