Bua Loy

Bua Loy is a traditional Thai dessert made with small, chewy rice balls served in sweet coconut milk. It's a comforting, warm dessert perfect for any time of the year.

Ingredients

  • Pandan leaves - 2 (optional)
  • Salt - 1/4 teaspoon
  • Sugar - 1/2 cup
  • Coconut milk - 2 cups
  • Food coloring - Few drops (optional)
  • Water - 1/2 cup
  • Glutinous rice flour - 1 cup

Instructions

  1. In a bowl, mix the glutinous rice flour with water. If desired, divide the dough into portions and add a few drops of food coloring to each.
  2. Roll the dough into small balls, about the size of a marble.
  3. Bring a pot of water to a boil. Drop the rice balls into the boiling water. Cook until they float to the surface, then remove with a slotted spoon and set aside.
  4. In a separate pot, combine the coconut milk, sugar, salt, and pandan leaves (if using). Bring to a simmer over medium heat.
  5. Add the cooked rice balls to the coconut milk mixture. Simmer for a few more minutes.
  6. Serve the Bua Loy warm, in small bowls.
