Beef and Vegetable Soup

A hearty and nutritious soup made with tender beef and a variety of fresh vegetables.

Ingredients

  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Thyme - 1 teaspoon
  • Bay leaf - 1
  • Beef broth - 4 cups
  • Tomatoes - 1 can (14 oz), diced
  • Green beans - 1 cup, trimmed and cut into 1-inch pieces
  • Potatoes - 2, diced
  • Celery - 2 stalks, sliced
  • Carrots - 2, sliced
  • Onion - 1, chopped
  • Beef stew meat - 1 lb, cubed

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef stew meat and cook until browned on all sides.
  3. Add the chopped onion, carrots, celery, and potatoes. Cook for 5 minutes, stirring occasionally.
  4. Pour in the beef broth and add the bay leaf, thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat to low, cover the pot, and simmer for 45 minutes, or until the beef is tender.
  6. Add the green beans and diced tomatoes. Simmer for an additional 10 minutes.
  7. Remove the bay leaf and adjust the seasoning if needed.
  8. Serve hot and enjoy!
