Banana Granola

This homemade banana granola is a delicious and healthy breakfast option. It's packed with oats, nuts, and dried bananas for a flavorful and nutritious start to your day.

Ingredients

  • Salt - 1/4 teaspoon
  • Vanilla extract - 1 teaspoon
  • Cinnamon - 1 teaspoon
  • Coconut oil - 2 tablespoons
  • Honey - 1/4 cup
  • Dried bananas - 1/2 cup, sliced
  • Pecans - 1 cup, chopped
  • Almonds - 1 cup, chopped
  • Bananas - 2 ripe, mashed
  • Oats - 3 cups

Instructions

  1. Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the oats, mashed bananas, chopped almonds, chopped pecans, dried bananas, honey, coconut oil, cinnamon, vanilla extract, and salt. Mix well until all the ingredients are evenly coated.
  3. Spread the mixture onto the prepared baking sheet in an even layer.
  4. Bake for 20-25 minutes, or until the granola is golden brown and crispy, stirring halfway through to ensure even baking.
  5. Remove from the oven and let the granola cool completely on the baking sheet. It will continue to crisp up as it cools.
  6. Once cooled, transfer the granola to an airtight container for storage. Enjoy as a topping for yogurt, with milk, or as a snack on its own.
