Bacon and Tomato Omelette

Ingredients

  • Butter - 1 tablespoon
  • Green onions - 2 tablespoons, chopped
  • Cheddar cheese - 1/2 cup, shredded
  • Black pepper - 1/4 teaspoon
  • Salt - 1/4 teaspoon
  • Milk - 2 tablespoons
  • Eggs - 4
  • Tomatoes - 2 medium, diced
  • Bacon - 4 slices, cooked and crumbled

Instructions

  1. In a bowl, whisk together the eggs, milk, salt, and black pepper.
  2. Heat butter in a non-stick skillet over medium heat.
  3. Pour the egg mixture into the skillet and cook for 2-3 minutes, or until the edges start to set.
  4. Sprinkle the bacon, tomatoes, cheddar cheese, and green onions evenly over one half of the omelette.
  5. Fold the other half of the omelette over the filling and cook for another 2-3 minutes, or until the cheese is melted and the omelette is cooked through.
  6. Slide the omelette onto a plate and cut in half.
  7. Serve hot and enjoy!
