Armenian Shish Kebab

This traditional Armenian Shish Kebab is made with marinated chunks of meat, skewered and grilled to perfection.

Ingredients

  • Salt and pepper - To taste
  • Cumin - 1 teaspoon
  • Paprika - 1 tablespoon
  • Olive oil - 1/4 cup
  • Lemon juice - 1/4 cup
  • Garlic - 3 cloves, minced
  • Onion - 1 large, cut into chunks
  • Red bell pepper - 2, cut into chunks
  • Lamb - 1 kg, cut into chunks

Instructions

  1. In a large bowl, combine the lamb, bell pepper, onion, garlic, lemon juice, olive oil, paprika, cumin, salt, and pepper. Toss to coat the meat and vegetables in the marinade. Cover and refrigerate for at least 2 hours, or overnight.
  2. Preheat a grill or grill pan to medium-high heat.
  3. Thread the marinated meat and vegetables onto skewers.
  4. Grill the kebabs for 5-7 minutes on each side, or until the meat is cooked to your desired level of doneness.
  5. Serve the kebabs with rice or flatbread, if desired.
