Apricot Cobbler Macaroni

This unique twist on a classic cobbler combines the sweetness of apricots with the comforting flavors of macaroni.

Ingredients

  • Cinnamon - 1/2 teaspoon
  • Vanilla extract - 1 teaspoon
  • Butter - 1/2 cup, melted
  • Milk - 1 cup
  • Salt - 1/4 teaspoon
  • Baking powder - 1 teaspoon
  • All - purpose flour - 1 cup
  • Lemon juice - 2 tablespoons
  • Sugar - 1 cup
  • Apricots - 4 cups, pitted and sliced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sliced apricots, sugar, and lemon juice. Toss to coat the apricots evenly. Let sit for 10 minutes to allow the flavors to meld.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Add the milk, melted butter, and vanilla extract to the dry ingredients. Stir until just combined.
  5. Pour the apricot mixture into a greased baking dish. Spread the macaroni mixture evenly over the top.
  6. Sprinkle cinnamon over the macaroni mixture.
  7. Bake for 35-40 minutes, or until the top is golden brown and the apricots are bubbling.
  8. Remove from the oven and let cool for a few minutes before serving.
  9. Serve warm with a scoop of vanilla ice cream, if desired.
