Ingredients

  • Fresh mint leaves - For garnish
  • Whipped cream - 1/2 cup
  • Vanilla yogurt - 1 cup
  • Vanilla extract - 1 teaspoon
  • Milk - 1/2 cup
  • Unsalted butter - 1/2 cup, cold and cubed
  • Salt - 1/4 teaspoon
  • Baking powder - 1 teaspoon
  • All - purpose flour - 1 cup
  • Lemon juice - 1 tablespoon
  • Sugar - 1/2 cup
  • Apricots - 4 cups, pitted and sliced

Instructions

  1. Preheat the oven to 375°F.
  2. In a mixing bowl, combine the sliced apricots, sugar, and lemon juice. Toss to coat the apricots evenly. Let it sit for 10 minutes to allow the flavors to meld.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Add the cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  5. Pour in the milk and vanilla extract. Stir until just combined, being careful not to overmix.
  6. Transfer the apricot mixture to a baking dish. Sprinkle the cobbler topping evenly over the apricots.
  7. Bake in the preheated oven for 25-30 minutes, or until the cobbler topping is golden brown and the apricots are bubbling.
  8. Remove from the oven and let it cool for a few minutes.
  9. To assemble the parfait, layer the apricot cobbler, vanilla yogurt, and whipped cream in serving glasses or bowls.
  10. Repeat the layers until all the ingredients are used, ending with a dollop of whipped cream on top.
  11. Garnish with fresh mint leaves.
