Ingredients

  • Powdered sugar - For dusting
  • Butter - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Milk - 1 cup
  • Eggs - 4
  • Bread - 6 slices, preferably brioche or challah
  • Cinnamon - 1 teaspoon
  • Cornstarch - 2 tablespoons
  • Sugar - 1/2 cup
  • Apricots - 4 cups, pitted and sliced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, combine the sliced apricots, sugar, cornstarch, and cinnamon. Cook over medium heat until the mixture thickens and the apricots are tender, about 5-7 minutes. Set aside.
  3. In a shallow dish, whisk together the eggs, milk, and vanilla extract.
  4. Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds on each side.
  5. In a large skillet, melt the butter over medium heat. Cook the soaked bread slices until golden brown on both sides, about 2-3 minutes per side.
  6. Transfer the cooked French toast slices to a baking dish. Spoon the apricot mixture over the top, spreading it evenly.
