Amaravati Chicken

Amaravati Chicken is a spicy and flavorful chicken dish from the region of Amaravati in Andhra Pradesh, India.

Ingredients

  • Fresh coriander leaves - For garnish
  • Oil - 3 tablespoons
  • Salt - To taste
  • Garam masala - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Red chili powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Curry leaves - 10 leaves
  • Green chilies - 2, slit
  • Garlic - 4 cloves, minced
  • Ginger - 1-inch piece, grated
  • Tomatoes - 2 medium, pureed
  • Onions - 2 medium, finely chopped
  • Chicken - 500 grams, bone-in pieces

Instructions

  1. Heat oil in a pan and add the chopped onions. Sauté until golden brown.
  2. Add the grated ginger, minced garlic, slit green chilies, and curry leaves. Sauté for a minute.
  3. Add the chicken pieces and cook until they turn golden brown.
  4. Add the tomato puree and cook for 2-3 minutes.
  5. Add turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt. Mix well.
  6. Cover the pan and cook for 15-20 minutes, or until the chicken is cooked through and tender.
  7. Garnish with fresh coriander leaves and serve hot with rice or roti.
