Aloo Matar

Aloo Matar is a delicious Indian dish made with potatoes and peas cooked in a flavorful tomato-based sauce.

Ingredients

  • Fresh cilantro - 2 tablespoons, chopped (for garnish)
  • Oil - 2 tablespoons
  • Salt - To taste
  • Garam masala - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Green chili - 1, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1-inch piece, grated
  • Tomatoes - 2 medium, pureed
  • Onion - 1 medium, finely chopped
  • Peas - 1 cup, fresh or frozen
  • Potatoes - 3 medium, peeled and diced

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add cumin seeds and let them splutter.
  3. Add chopped onion and sauté until golden brown.
  4. Add grated ginger, minced garlic, and green chili. Sauté for a minute.
  5. Add pureed tomatoes and cook until the oil separates from the masala.
  6. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.
  7. Add diced potatoes and peas. Mix well to coat them with the masala.
  8. Cover the pan and cook for about 15 minutes, or until the potatoes are tender.
  9. Sprinkle garam masala and mix well.
  10. Garnish with fresh cilantro and serve hot with rice or roti.
