Ingredients

  • Vegetable oil - For frying
  • Potatoes - 4 large
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Egg - 1
  • Ale - 1 cup
  • All - purpose flour - 1 cup
  • White fish fillets - 4

Instructions

  1. Peel the potatoes and cut into thick chips. Rinse under cold water and pat dry.
  2. Heat the vegetable oil in a deep fryer or large, deep saucepan to 180°C (350°F).
  3. Fry the chips in batches for 5-6 minutes until golden and crisp. Remove with a slotted spoon and drain on kitchen paper.
  4. In a large bowl, mix together the flour, ale, egg, salt, and pepper to form a smooth, thick batter.
  5. Dip each fish fillet in the batter to thoroughly coat, then carefully lower into the hot oil.
  6. Fry for 6-8 minutes until golden and crisp. Using a slotted spoon, lift out the fish and drain on kitchen paper.
  7. Serve the fish with the chips and a side of tartare sauce or mushy peas if desired.
