Yogurt Pancakes
These fluffy and delicious pancakes are made with yogurt for added tanginess and moisture.
Ingredients - Serves 4
- Butter - 2 tablespoons, melted
- Vanilla extract - 1 teaspoon
- Milk - 1/2 cup
- Plain yogurt - 1 cup
- Egg - 1
- Sugar - 2 tablespoons
- Salt - 1/2 teaspoon
- Baking powder - 2 teaspoons
- All-purpose flour - 1 1/2 cups
Let's Get Started
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, beat the egg. Add the yogurt, milk, vanilla extract, and melted butter. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- Heat a non-stick skillet or griddle over medium heat. Grease with butter or cooking spray.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.
- Repeat with the remaining batter.
- Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh fruits, or yogurt.
