Let's Get Started

  1. Preheat the oven to 375°F and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, beat the butter and sugar together until light and fluffy. Beat in the egg and vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, beginning and ending with the dry ingredients.
  5. Drop rounded tablespoons of dough onto the prepared baking sheets. Bake for 10 minutes, or until the cookies spring back when lightly touched. Allow to cool completely.
  6. To make the filling, beat together the marshmallow fluff and powdered sugar until smooth.
  7. Spread the filling onto the flat side of half of the cookies. Top with the remaining cookies, flat side down, to make sandwiches.
