Whoopie Pie
A classic dessert from New England, whoopie pies consist of two soft cookies sandwiched together with a creamy filling.
Ingredients - Serves 12
- Powdered sugar - 1/2 cup
- Marshmallow fluff - 1 cup
- Buttermilk - 1 cup
- Vanilla extract - 1 teaspoon
- Egg - 1 large
- Granulated sugar - 1 cup
- Butter - 1/2 cup, softened
- Salt - 1/2 teaspoon
- Baking soda - 1 teaspoon
- Cocoa powder - 1/2 cup
- All-purpose flour - 2 cups
Let's Get Started
- Preheat the oven to 375°F and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In a large bowl, beat the butter and sugar together until light and fluffy. Beat in the egg and vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, beginning and ending with the dry ingredients.
- Drop rounded tablespoons of dough onto the prepared baking sheets. Bake for 10 minutes, or until the cookies spring back when lightly touched. Allow to cool completely.
- To make the filling, beat together the marshmallow fluff and powdered sugar until smooth.
- Spread the filling onto the flat side of half of the cookies. Top with the remaining cookies, flat side down, to make sandwiches.
