Warabimochi
Warabimochi is a traditional Japanese dessert made from bracken starch and covered in kinako (roasted soybean flour) and kuromitsu (brown sugar syrup). It has a unique jelly-like texture and a sweet, nutty flavor.
Ingredients - Serves 4
- Kuromitsu (brown sugar syrup) - 1/4 cup
- Kinako (roasted soybean flour) - 1/2 cup
- Water - 2 cups
- Bracken starch - 1 cup
Let's Get Started
- In a saucepan, combine the bracken starch and water. Stir well to dissolve any lumps.
- Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and becomes translucent.
- Remove the saucepan from heat and let the mixture cool for a few minutes.
- Transfer the mixture to a square or rectangular container and refrigerate for at least 1 hour, or until set.
- Once set, remove the warabimochi from the container and cut it into bite-sized pieces.
- Coat the warabimochi pieces with kinako (roasted soybean flour) and drizzle with kuromitsu (brown sugar syrup) before serving.
