Let's Get Started

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  3. Add the black beans and cooked rice to the skillet and stir to combine.
  4. Warm the tortillas in the microwave for about 30 seconds.
  5. Spread a spoonful of salsa on each tortilla.
  6. Top with the bean and rice mixture, avocado slices, and shredded cheese.
  7. Roll up the tortillas, tucking in the sides as you go.
  8. Serve the burritos warm with extra salsa on the side.
