Veggie Burrito
A hearty and healthy veggie burrito packed with black beans, rice, avocado, and salsa.
Ingredients - Serves 4
- Large flour tortillas - 4
- Cheese - 1 cup, shredded
- Salsa - 1 cup
- Avocado - 1, sliced
- Cooked rice - 2 cups
- Black beans - 1 can, drained and rinsed
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the black beans and cooked rice to the skillet and stir to combine.
- Warm the tortillas in the microwave for about 30 seconds.
- Spread a spoonful of salsa on each tortilla.
- Top with the bean and rice mixture, avocado slices, and shredded cheese.
- Roll up the tortillas, tucking in the sides as you go.
- Serve the burritos warm with extra salsa on the side.
