Veggie and Feta Stuffed Peppers
These delicious stuffed peppers are filled with a flavorful mixture of vegetables and feta cheese.
Ingredients - Serves 4
- Salt and pepper - To taste
- Dried oregano - 1 teaspoon
- Feta cheese - 1 cup, crumbled
- Spinach - 2 cups, chopped
- Garlic - 2 cloves, minced
- Yellow squash - 1 medium, diced
- Zucchini - 1 medium, diced
- Onion - 1 medium, diced
- Olive oil - 2 tablespoons
- Bell peppers - 4 large
Let's Get Started
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- Heat olive oil in a large skillet over medium heat.
- Add the onion, zucchini, yellow squash, and garlic. Cook until the vegetables are tender, about 5 minutes.
- Add the spinach and cook until wilted, about 2 minutes.
- Remove from heat and stir in the feta cheese, dried oregano, salt, and pepper.
- Stuff the bell peppers with the vegetable and feta mixture.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is melted and golden.
