Ingredients - Serves 6
- Salt and pepper - To taste
- Canned black beans - 1 can (15 ounces), drained and rinsed
- Canned kidney beans - 2 cans (15 ounces each), drained and rinsed
- Canned diced tomatoes - 1 can (28 ounces)
- Cumin - 1 tablespoon
- Chili powder - 2 tablespoons
- Carrots - 2, chopped
- Bell peppers - 2, chopped
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, bell peppers, and carrots. Cook until the vegetables are tender, about 10 minutes.
- Add the chili powder and cumin and cook for another minute.
- Add the diced tomatoes, kidney beans, black beans, salt, and pepper. Stir to combine.
- Reduce the heat to low and let the chili simmer for 45 minutes, stirring occasionally.
