Vegan Coconut Curry Tofu

Ingredients - Serves 4
- Fresh cilantro - For garnish
- Salt and pepper - To taste
- Vegetable broth - 1 cup
- Coconut milk - 1 can
- Curry powder - 2 tablespoons
- Ginger - 1 tablespoon, minced
- Garlic - 3 cloves, minced
- Onion - 1, diced
- Coconut oil - 2 tablespoons
- Tofu - 1 block, pressed and cubed

- Heat the coconut oil in a large pan over medium heat.
- Add the tofu cubes and cook until they are golden brown on all sides. Remove the tofu from the pan and set aside.
