Let's Get Started

  1. Wash the ume and remove the stems.
  2. In a large pot, add the ume and sugar. Let it sit for an hour to let the ume release its juice.
  3. Add water to the pot and bring to a boil.
  4. Once boiling, reduce the heat to low and let it simmer for about 30 minutes.
  5. Turn off the heat and let it cool.
  6. Once cooled, strain the juice into a pitcher.
  7. Refrigerate until chilled. Serve over ice.
