Udon with Peanut Sauce
This udon noodle dish is tossed in a creamy and flavorful peanut sauce, topped with fresh vegetables and herbs.
Ingredients - Serves 2
- Roasted peanuts - 2 tablespoons, chopped
- Cilantro - 2 tablespoons, chopped
- Green onions - 2, thinly sliced
- Carrot - 1, julienned
- Bell pepper - 1, thinly sliced
- Red pepper flakes - 1/4 teaspoon
- Sesame oil - 1 teaspoon
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Honey - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Soy sauce - 2 tablespoons
- Creamy peanut butter - 1/4 cup
- Udon noodles - 8 ounces
Let's Get Started
- Cook the udon noodles according to package instructions. Drain and set aside.
- In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, minced garlic, grated ginger, sesame oil, and red pepper flakes until well combined.
- In a large skillet, heat a tablespoon of oil over medium heat. Add the bell pepper and carrot, and sauté for 3-4 minutes until slightly softened.
- Add the cooked udon noodles to the skillet and pour the peanut sauce over them. Toss well to coat the noodles and vegetables with the sauce.
- Cook for an additional 2-3 minutes, stirring constantly, until the noodles are heated through.
- Remove from heat and garnish with sliced green onions, chopped cilantro, and roasted peanuts.
- Serve hot and enjoy!
