Turkey and Quinoa Meatballs
These healthy and delicious meatballs are made with lean ground turkey and quinoa.
Ingredients - Serves 4
- Marinara sauce - 2 cups
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Parsley - 1/4 cup, chopped
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Egg - 1
- Quinoa - 1 cup, cooked
- Ground turkey - 1 pound
Let's Get Started
- In a large bowl, combine the ground turkey, cooked quinoa, egg, garlic, onion, parsley, salt, and pepper.
- Form the mixture into 1-inch meatballs and set aside.
- Heat the olive oil in a large skillet over medium heat.
- Add the meatballs and cook until browned on all sides, about 10 minutes.
- Add the marinara sauce to the skillet and bring to a simmer.
- Cover and cook for 15 minutes, or until the meatballs are cooked through.
- Serve the meatballs with extra marinara sauce on top.
