Tim Tam Cheesecake

Ingredients - Serves 8

Let's Get Started

  1. Preheat the oven to 160°C (320°F).
  2. Crush the Tim Tams in a food processor until they resemble fine crumbs. Add the melted butter and process until well combined.
  3. Press the mixture into the base of a 20cm (8 inch) springform pan and refrigerate for 15 minutes.
  4. Beat the cream cheese, sugar and vanilla in a large bowl until smooth and creamy.
  5. Add the eggs, one at a time, beating well after each addition. Stir in the sour cream and melted chocolate.
  6. Pour the mixture over the biscuit base and smooth the surface.
  7. Bake for 1 hour or until just set in the center. Turn off the oven and leave the cheesecake in the oven, with the door ajar, for 2 hours or until cooled completely.
  8. Refrigerate for 3 hours or until well chilled. Serve.
