Tim Tam Cheesecake
A rich and creamy cheesecake made with Australia's favorite biscuit, the Tim Tam.
Ingredients - Serves 8
- Dark chocolate - 200 grams, melted
- Sour cream - 1 cup
- Eggs - 3
- Vanilla extract - 1 teaspoon
- Sugar - 1 cup
- Cream cheese - 500 grams, softened
- Butter - 100 grams, melted
- Tim tam biscuits - 2 packets
Let's Get Started
- Preheat the oven to 160°C (320°F).
- Crush the Tim Tams in a food processor until they resemble fine crumbs. Add the melted butter and process until well combined.
- Press the mixture into the base of a 20cm (8 inch) springform pan and refrigerate for 15 minutes.
- Beat the cream cheese, sugar and vanilla in a large bowl until smooth and creamy.
- Add the eggs, one at a time, beating well after each addition. Stir in the sour cream and melted chocolate.
- Pour the mixture over the biscuit base and smooth the surface.
- Bake for 1 hour or until just set in the center. Turn off the oven and leave the cheesecake in the oven, with the door ajar, for 2 hours or until cooled completely.
- Refrigerate for 3 hours or until well chilled. Serve.
