Tempura Vegetables

Ingredients - Serves 4
- Soy sauce - For dipping
- Vegetable oil - For frying
- Cold water - 1 cup
- Salt - 1/2 teaspoon
- Baking powder - 1 teaspoon
- Cornstarch - 1/2 cup
- All-purpose flour - 1 cup
- Vegetables (bell peppers, broccoli, carrots, etc.) - 4 cups, cut into bite-sized pieces
Let's Get Started
- In a large bowl, whisk together the flour, cornstarch, baking powder, and salt.
- Gradually add the cold water, whisking until the batter is smooth.
- Heat the vegetable oil in a deep fryer or large pot to 375°F.
- Dip the vegetables into the batter, allowing any excess to drip off.
- Fry the vegetables in the hot oil until golden brown, about 3-4 minutes.
- Remove the vegetables with a slotted spoon and drain on paper towels.
