These vegan kofta kebabs are made with tempeh and a blend of spices, then grilled to perfection.
Ingredients - Serves 4
- Skewers - 8
- Olive oil - 2 tablespoons
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Parsley - 1/4 cup, finely chopped
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Tempeh - 8 oz, crumbled
Let's Get Started
- In a large bowl, combine the crumbled tempeh, chopped onion, minced garlic, chopped parsley, cumin, coriander, cayenne pepper, salt, and black pepper.
- Mix well until the ingredients are evenly distributed.
- Shape the mixture into 8 equal-sized koftas, then thread each one onto a skewer.
- Heat the olive oil in a grill pan over medium heat.
- Add the skewers and cook for about 7 minutes on each side, or until the koftas are browned and heated through.
