Tempeh and Edamame Stir Fry
A delicious and healthy stir fry made with tempeh, edamame, and a variety of colorful vegetables.
Ingredients - Serves 4
- Scallions - 2, chopped
- Ginger - 1 tablespoon, grated
- Sesame oil - 2 tablespoons
- Soy sauce - 1/4 cup
- Garlic - 2 cloves, minced
- Bell peppers - 2, thinly sliced
- Carrots - 2, thinly sliced
- Edamame - 1 cup, shelled
- Tempeh - 1 block, cubed
Let's Get Started
- Heat the sesame oil in a large wok or skillet over medium heat.
- Add the tempeh and cook until browned on all sides, about 5 minutes. Remove from the pan and set aside.
- In the same pan, add the garlic and ginger and cook until fragrant, about 1 minute.
- Add the carrots and bell peppers and cook until tender, about 5 minutes.
- Add the edamame and soy sauce and stir to combine.
- Return the tempeh to the pan and stir to combine.
- Cook for another 2-3 minutes, until everything is heated through.
- Serve the stir fry topped with the chopped scallions.
