Tempeh and Edamame Stir Fry

Ingredients - Serves 4

Let's Get Started

  1. Heat the sesame oil in a large wok or skillet over medium heat.
  2. Add the tempeh and cook until browned on all sides, about 5 minutes. Remove from the pan and set aside.
  3. In the same pan, add the garlic and ginger and cook until fragrant, about 1 minute.
  4. Add the carrots and bell peppers and cook until tender, about 5 minutes.
  5. Add the edamame and soy sauce and stir to combine.
  6. Return the tempeh to the pan and stir to combine.
  7. Cook for another 2-3 minutes, until everything is heated through.
  8. Serve the stir fry topped with the chopped scallions.
