Let's Get Started

  1. Place the eggs in a pot and cover with cold water. Bring to a boil, then reduce the heat and simmer for 10 minutes.
  2. Remove the eggs from the heat and let them cool. Once cool, gently crack the shells with the back of a spoon.
  3. In the same pot, combine the tea leaves, soy sauce, star anise, cinnamon stick, peppercorns, and enough water to cover the eggs.
  4. Bring the mixture to a boil, then reduce the heat and simmer for 1 hour.
  5. Remove the pot from the heat and let the eggs steep in the tea mixture for at least 2 hours, or overnight for a stronger flavor.
  6. Peel the eggs before serving.
