  2. Prepare the sausage casing by rinsing it thoroughly under cold water. Soak the casing in cold water for about 30 minutes to soften it.
  3. Attach a sausage stuffer to a sausage-making machine or a piping bag fitted with a large round tip.
  4. Carefully slide the softened casing onto the sausage stuffer or piping bag, leaving a small overhang at the end.
  5. Fill the sausage stuffer or piping bag with the seasoned ground pork mixture.
  6. Hold the casing with one hand and slowly squeeze the ground pork mixture into the casing, guiding it with your other hand to create a long sausage link.
  7. Continue filling the casing until all the ground pork mixture is used, leaving a small overhang at the other end of the casing.
  8. Twist the sausage into individual links by pinching and twisting the casing at regular intervals.
  9. Once all the sausage links are formed, refrigerate them for at least 1 hour to allow the flavors to meld.
