Tataki Kyuri
Tataki Kyuri is a refreshing Japanese cucumber salad that is smashed rather than sliced. The smashing process allows the cucumber to absorb more flavor from the dressing.
Ingredients - Serves 4
- Sesame seeds - 1 tablespoon
- Red pepper flakes - 1/4 teaspoon
- Garlic - 1 clove, minced
- Sesame oil - 1 teaspoon
- Rice vinegar - 1 tablespoon
- Soy sauce - 2 tablespoons
- Salt - 1 teaspoon
- Cucumbers - 2 large
Let's Get Started
- Place the cucumbers in a plastic bag and seal it.
- Use a rolling pin or the flat side of a large knife to smash the cucumbers until they are broken up into large pieces.
- Transfer the smashed cucumbers to a strainer and sprinkle with the salt. Let sit for 10 minutes.
- In a large bowl, combine the soy sauce, rice vinegar, sesame oil, minced garlic, and red pepper flakes.
- Add the cucumbers to the bowl and toss to combine.
- Sprinkle with sesame seeds before serving.
