Tarte aux Prunes
Tarte aux Prunes is a delicious French plum tart made with a buttery crust and sweet plums.
Ingredients - Serves 8
- Apricot jam - 2 tablespoons
- Lemon juice - 1 tablespoon
- Ground cinnamon - 1/2 teaspoon
- Brown sugar - 1/4 cup
- Plums - 1 pound, pitted and sliced
- Egg - 1, beaten
- Salt - 1/4 teaspoon
- Granulated sugar - 1/4 cup
- Unsalted butter - 1/2 cup, cold and cubed
- All-purpose flour - 1 1/2 cups
Let's Get Started
- In a food processor, combine the flour, butter, granulated sugar, and salt. Pulse until the mixture resembles coarse crumbs.
- Add the beaten egg and pulse until the dough comes together.
- Transfer the dough to a lightly floured surface and shape it into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C).
- On a lightly floured surface, roll out the dough into a circle large enough to fit a 9-inch tart pan. Transfer the dough to the tart pan and press it into the bottom and sides.
- In a bowl, combine the sliced plums, brown sugar, cinnamon, and lemon juice. Toss to coat the plums.
- Spread the apricot jam evenly over the bottom of the tart crust.
- Arrange the plum slices in a circular pattern over the jam.
- Bake for 40-45 minutes, or until the crust is golden and the plums are tender.
- Allow the tart to cool before serving. Serve at room temperature or chilled.
