Tahchin
Tahchin is a traditional Persian rice dish that is layered with chicken and yogurt, and baked to perfection.
Ingredients - Serves 6
- Almonds - 1/4 cup, chopped
- Pistachios - 1/4 cup, chopped
- Vegetable oil - 2 tablespoons
- Butter - 1/2 cup, melted
- Salt and pepper - To taste
- Turmeric - 1/2 teaspoon
- Saffron - 1/2 teaspoon, dissolved in 2 tablespoons hot water
- Eggs - 3
- Plain yogurt - 2 cups
- Chicken breasts - 2, boneless and skinless
- Basmati rice - 3 cups
Let's Get Started
- Rinse the rice in cold water until the water runs clear. Soak the rice in cold water for 2 hours.
- Bring a large pot of salted water to a boil. Add the chicken breasts and cook for 20 minutes, or until cooked through. Remove the chicken from the pot and let cool. Shred the chicken into small pieces.
- In a large bowl, mix together the yogurt, eggs, saffron, turmeric, salt, and pepper.
- Drain the soaked rice and add it to the yogurt mixture. Mix well.
- Preheat the oven to 350°F.
- Grease a 9-inch round baking dish with the vegetable oil. Pour half of the melted butter into the dish.
- Spread half of the rice mixture evenly in the bottom of the dish. Top with the shredded chicken, then cover with the remaining rice mixture.
- Pour the remaining melted butter over the top of the rice. Cover the dish with foil.
- Bake for 1 hour and 15 minutes, or until the rice is cooked through and the top is golden brown.
- Let the tahchin cool for 10 minutes before flipping it onto a serving platter.
- Garnish with chopped pistachios and almonds before serving.
