Ingredients - Serves 6

Let's Get Started

  1. Rinse the rice in cold water until the water runs clear. Soak the rice in cold water for 2 hours.
  2. Bring a large pot of salted water to a boil. Add the chicken breasts and cook for 20 minutes, or until cooked through. Remove the chicken from the pot and let cool. Shred the chicken into small pieces.
  3. In a large bowl, mix together the yogurt, eggs, saffron, turmeric, salt, and pepper.
  4. Drain the soaked rice and add it to the yogurt mixture. Mix well.
  5. Preheat the oven to 350°F.
  6. Grease a 9-inch round baking dish with the vegetable oil. Pour half of the melted butter into the dish.
  7. Spread half of the rice mixture evenly in the bottom of the dish. Top with the shredded chicken, then cover with the remaining rice mixture.
  8. Pour the remaining melted butter over the top of the rice. Cover the dish with foil.
  9. Bake for 1 hour and 15 minutes, or until the rice is cooked through and the top is golden brown.
  10. Let the tahchin cool for 10 minutes before flipping it onto a serving platter.
  11. Garnish with chopped pistachios and almonds before serving.
