Szechuan Beef Stir Fry

  1. In a bowl, combine the soy sauce, cornstarch, crushed Szechuan peppercorns, minced garlic, and grated ginger. Mix well.
  2. Add the sliced beef to the bowl and toss to coat the beef with the marinade. Let it marinate for 10 minutes.
  3. Heat the vegetable oil in a large skillet or wok over high heat.
  4. Add the marinated beef to the skillet and stir fry for 2-3 minutes, or until the beef is browned and cooked to your desired level of doneness. Remove the beef from the skillet and set aside.
  5. In the same skillet, add the sliced red bell pepper, green bell pepper, and onion. Stir fry for 2-3 minutes, or until the vegetables are crisp-tender.
  6. Return the cooked beef to the skillet and add the Szechuan sauce. Stir fry for another 1-2 minutes, or until the beef and vegetables are coated in the sauce and heated through.
  7. Serve the Szechuan beef stir fry over cooked rice and garnish with chopped green onions.
