Swiss Chard and Boursin Stuffed Pork Loin

  1. Preheat the oven to 375°F.
  2. Butterfly the pork loin by making a lengthwise cut down the center, without cutting all the way through.
  3. Open up the pork loin and flatten it with a meat mallet until it is an even thickness.
  4. In a skillet, heat the olive oil over medium heat. Add the garlic and sauté until fragrant.
  5. Add the Swiss chard to the skillet and cook until wilted. Remove from heat.
  6. Spread the Boursin cheese evenly over the flattened pork loin.
  7. Spread the cooked Swiss chard mixture over the Boursin cheese.
  8. Roll up the pork loin tightly and secure with kitchen twine.
  9. Season the outside of the pork loin with salt, pepper, and dried thyme.
  10. Place the stuffed pork loin in a roasting pan and pour the chicken broth into the pan.
  11. Roast in the preheated oven for 45-50 minutes, or until the internal temperature reaches 145°F.
  12. Remove from the oven and let the pork loin rest for 10 minutes before slicing.
  13. Slice the stuffed pork loin and serve with the pan juices as a sauce.
