Swiss Chard and Boursin Stuffed Pork Loin
This delicious pork loin is stuffed with a flavorful mixture of Swiss chard and Boursin cheese, resulting in a tender and savory dish.
Ingredients - Serves 6
- Chicken broth - 1 cup
- Dried thyme - 1 teaspoon
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Boursin cheese - 1/2 cup
- Swiss chard - 4 cups, chopped
- Pork loin - 2 pounds
Let's Get Started
- Preheat the oven to 375°F.
- Butterfly the pork loin by making a lengthwise cut down the center, without cutting all the way through.
- Open up the pork loin and flatten it with a meat mallet until it is an even thickness.
- In a skillet, heat the olive oil over medium heat. Add the garlic and sauté until fragrant.
- Add the Swiss chard to the skillet and cook until wilted. Remove from heat.
- Spread the Boursin cheese evenly over the flattened pork loin.

- Season the outside of the pork loin with salt, pepper, and dried thyme.
- Place the stuffed pork loin in a roasting pan and pour the chicken broth into the pan.
- Roast in the preheated oven for 45-50 minutes, or until the internal temperature reaches 145°F.
- Remove from the oven and let the pork loin rest for 10 minutes before slicing.
- Slice the stuffed pork loin and serve with the pan juices as a sauce.
