Suquet de Peix
Suquet de Peix is a traditional Catalan fish stew, brimming with various types of seafood in a rich, flavorful broth.
Ingredients - Serves 4
- Saffron - A pinch
- Salt and pepper - To taste
- Parsley - A handful, chopped
- Mixed seafood - 1 kg (such as monkfish, prawns, mussels)
- Potatoes - 4, peeled and sliced
- Fish stock - 1 litre
- Tomatoes - 2, peeled and chopped
- Garlic - 4 cloves, minced
- Onions - 2, finely chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onions and garlic and cook until the onions are soft and golden, about 10 minutes.
- Add the tomatoes and cook for another 5 minutes.
- Add the fish stock, potatoes, saffron, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Add the mixed seafood and cook for another 10 minutes, or until the seafood is cooked through.
- Stir in the parsley and serve hot.
