These refreshing summer rolls are filled with fresh vegetables, herbs, and shrimp, wrapped in rice paper and served with a delicious peanut dipping sauce.

Ingredients - Serves 4

Let's Get Started

  1. Fill a large bowl with warm water. Dip one rice paper wrapper into the water for a few seconds until it becomes soft and pliable.
  2. Place the softened rice paper wrapper on a clean surface.
  3. In the center of the wrapper, place 2 shrimp, a small handful of rice vermicelli noodles, and a few strips of carrot, cucumber, and red bell pepper.
  4. Top with a few fresh mint leaves, cilantro leaves, and a lettuce leaf.
  5. Fold the sides of the wrapper over the filling, then roll tightly from the bottom to the top, sealing the edges.
  6. Repeat with the remaining ingredients to make 8 summer rolls.
  7. For the peanut dipping sauce, combine 1/4 cup peanut butter, 2 tablespoons soy sauce, 1 tablespoon honey, 1 tablespoon lime juice, and 1/2 teaspoon sriracha in a small bowl. Mix well.
  8. Serve the summer rolls with the peanut dipping sauce.
