Summer Rolls
These refreshing summer rolls are filled with fresh vegetables, herbs, and shrimp, wrapped in rice paper and served with a delicious peanut dipping sauce.
Ingredients - Serves 4
- Lettuce leaves - 8 small leaves
- Fresh cilantro leaves - Handful
- Fresh mint leaves - Handful
- Red bell pepper - 1, julienned
- Cucumber - 1, julienned
- Carrot - 1, julienned
- Rice vermicelli noodles - 2 ounces, cooked according to package instructions
- Shrimp - 16 medium, cooked and peeled
- Rice paper wrappers - 8 sheets
Let's Get Started
- Fill a large bowl with warm water. Dip one rice paper wrapper into the water for a few seconds until it becomes soft and pliable.
- Place the softened rice paper wrapper on a clean surface.
- In the center of the wrapper, place 2 shrimp, a small handful of rice vermicelli noodles, and a few strips of carrot, cucumber, and red bell pepper.
- Top with a few fresh mint leaves, cilantro leaves, and a lettuce leaf.
- Fold the sides of the wrapper over the filling, then roll tightly from the bottom to the top, sealing the edges.
- Repeat with the remaining ingredients to make 8 summer rolls.
- For the peanut dipping sauce, combine 1/4 cup peanut butter, 2 tablespoons soy sauce, 1 tablespoon honey, 1 tablespoon lime juice, and 1/2 teaspoon sriracha in a small bowl. Mix well.
- Serve the summer rolls with the peanut dipping sauce.
