Stewed Beef Brazilian Style
This hearty Brazilian-style stewed beef is packed with flavors from spices, vegetables, and tender beef.
Ingredients - Serves 6
- Lime - 1, juiced
- Fresh cilantro - 1/4 cup, chopped
- Green beans - 1 cup, trimmed and cut into 1-inch pieces
- Carrots - 2 large, peeled and sliced
- Potatoes - 2 large, peeled and diced
- Salt and pepper - To taste
- Oregano - 1 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Bay leaves - 2
- Beef broth - 4 cups
- Tomatoes - 2 large, diced
- Bell pepper - 1, chopped
- Garlic - 4 cloves, minced
- Onion - 1 large, chopped
- Beef chuck roast - 2 pounds, cut into cubes
Let's Get Started
- In a large pot, heat some oil over medium heat.
- Add the beef cubes and brown them on all sides. Remove from the pot and set aside.
- In the same pot, add the chopped onion, minced garlic, and bell pepper. Sauté until the vegetables are softened.
- Add the diced tomatoes, beef broth, bay leaves, cumin, paprika, oregano, salt, and pepper. Stir well.
- Return the browned beef cubes to the pot and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and simmer for about 1.5 to 2 hours, or until the beef is tender.
- Add the diced potatoes, sliced carrots, and green beans to the pot. Stir to combine.
- Cover the pot again and continue simmering for an additional 30 minutes, or until the vegetables are cooked through.
- Remove the bay leaves from the stew.
- Stir in the chopped cilantro and lime juice.
- Taste and adjust the seasoning if needed.
- Serve the stewed beef Brazilian style hot with rice or crusty bread.
