Stewed Beef Brazilian Style

  1. In a large pot, heat some oil over medium heat.
  2. Add the beef cubes and brown them on all sides. Remove from the pot and set aside.
  3. In the same pot, add the chopped onion, minced garlic, and bell pepper. Sauté until the vegetables are softened.
  4. Add the diced tomatoes, beef broth, bay leaves, cumin, paprika, oregano, salt, and pepper. Stir well.
  5. Return the browned beef cubes to the pot and bring the mixture to a boil.
  6. Reduce the heat to low, cover the pot, and simmer for about 1.5 to 2 hours, or until the beef is tender.
  7. Add the diced potatoes, sliced carrots, and green beans to the pot. Stir to combine.
  8. Cover the pot again and continue simmering for an additional 30 minutes, or until the vegetables are cooked through.
  9. Remove the bay leaves from the stew.
  10. Stir in the chopped cilantro and lime juice.
  11. Taste and adjust the seasoning if needed.
