Steelhead with Potato Hash
This delicious steelhead trout is served with a flavorful potato hash.
Ingredients - Serves 2
- Fresh parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Paprika - 1 teaspoon
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Red bell pepper - 1, diced
- Potatoes - 2 medium, diced
- Steelhead trout fillets - 2 fillets
Let's Get Started
- Preheat the oven to 400°F.
- Season the steelhead trout fillets with salt, pepper, and paprika.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the trout fillets for 3-4 minutes on each side, until cooked through. Remove from the skillet and set aside.
- In the same skillet, add another tablespoon of olive oil. Add the diced potatoes, red bell pepper, onion, and minced garlic. Cook until the potatoes are golden and crispy, about 10-12 minutes.
- Season the potato hash with salt, pepper, and paprika. Stir in the chopped parsley.
- Serve the steelhead trout fillets on top of the potato hash.
- Garnish with additional parsley, if desired.
