Spicy Miso Udon
This spicy miso udon is a delicious and comforting Japanese noodle dish with a flavorful broth and chewy udon noodles.
Ingredients - Serves 2
- Baby spinach - 2 cups
- Firm tofu - 1/2 cup, cubed
- Green onions - 2, sliced
- Red pepper flakes - 1 teaspoon
- Ginger - 1 tablespoon, grated
- Garlic - 2 cloves, minced
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Miso paste - 3 tablespoons
- Vegetable broth - 4 cups
- Udon noodles - 8 ounces
Let's Get Started
- Cook the udon noodles according to the package instructions. Drain and set aside.
- In a large pot, heat the sesame oil over medium heat. Add the garlic, ginger, and red pepper flakes. Cook for 1-2 minutes until fragrant.
- Add the vegetable broth, miso paste, and soy sauce to the pot. Stir well to dissolve the miso paste.
- Bring the broth to a simmer and add the tofu and green onions. Cook for 5 minutes.
- Add the cooked udon noodles and baby spinach to the pot. Cook for an additional 2-3 minutes until the spinach wilts.
- Serve the spicy miso udon hot and garnish with additional green onions, if desired.
