Spicy Miso Udon

Let's Get Started

  1. Cook the udon noodles according to the package instructions. Drain and set aside.
  2. In a large pot, heat the sesame oil over medium heat. Add the garlic, ginger, and red pepper flakes. Cook for 1-2 minutes until fragrant.
  3. Add the vegetable broth, miso paste, and soy sauce to the pot. Stir well to dissolve the miso paste.
  4. Bring the broth to a simmer and add the tofu and green onions. Cook for 5 minutes.
  5. Add the cooked udon noodles and baby spinach to the pot. Cook for an additional 2-3 minutes until the spinach wilts.
  6. Serve the spicy miso udon hot and garnish with additional green onions, if desired.
