- Salt and pepper - To taste
- Chicken broth - 1 cup
- Chipotle chiles in adobo sauce - 2, chopped
- Tomatoes - 4, chopped
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Chicken breasts - 2, boneless and skinless
Let's Get Started
- Boil the chicken breasts in a pot of water until cooked through, about 15 minutes. Shred the chicken and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the tomatoes and chipotle chiles to the skillet and cook for another 5 minutes.
- Add the shredded chicken, chicken broth, salt, and pepper to the skillet. Stir to combine.
- Cover the skillet and simmer for 15 minutes, until the flavors are well combined.
- Serve the chicken tinga with tortillas or rice, if desired.
