Spaghetti Squash Casserole

Ingredients - Serves 6

Let's Get Started

  1. Preheat the oven to 375°F. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place the halves cut side down on a baking sheet and bake for 45 minutes, or until the squash is tender.
  2. While the squash is baking, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  3. Add the tomatoes, basil, salt, and pepper to the skillet and simmer for 15 minutes.
  4. When the squash is done, use a fork to scrape the flesh into spaghetti-like strands. Add the squash to the skillet and stir to combine.
  5. Spread the squash mixture in a casserole dish and top with the mozzarella and Parmesan cheeses.
  6. Bake for 15 minutes, or until the cheese is melted and bubbly.
