Soupe a Loignon
Soupe à l'oignon, also known as French Onion Soup, is a classic French dish made with caramelized onions, beef broth, and melted cheese.
Ingredients - Serves 4
- Salt and pepper - To taste
- Gruyere cheese - 1 cup, grated
- Baguette - 1, sliced
- Dry white wine - 1/2 cup
- Beef broth - 6 cups
- All-purpose flour - 2 tablespoons
- Butter - 4 tablespoons
- Yellow onions - 4 large, thinly sliced
Let's Get Started
- In a large pot, melt the butter over medium heat.
- Add the sliced onions and cook until caramelized, stirring occasionally, for about 30 minutes.
- Sprinkle the flour over the onions and stir well to coat.
- Cook for an additional 2 minutes to cook off the raw flour taste.
- Pour in the beef broth and white wine, stirring to combine.
- Bring the soup to a simmer and let it cook for 20 minutes to allow the flavors to meld together.
- Preheat the oven to 350°F (175°C).
- Place the baguette slices on a baking sheet and toast them in the oven until lightly golden.
- Remove the toasted baguette slices from the oven and set aside.
- Ladle the soup into oven-safe bowls and place a few toasted baguette slices on top of each bowl.
- Sprinkle the grated Gruyere cheese over the baguette slices.
- Place the bowls on a baking sheet and broil in the oven until the cheese is melted and bubbly, about 3-5 minutes.
- Carefully remove the bowls from the oven and let them cool slightly before serving.
- Serve the Soupe à l'Oignon hot and enjoy!
